Spring Cleaning Gift Bags

I love Spring but the allergens have me moving a little slower than usual. I wanted to share this last week because we had so much fun. This event is our monthly 1st Saturday Brunch which was hosted, for the first time, by one of my cousins. She had a great idea for a Spring Cleaning Theme.

We each were required to bring something nice that we no longer wanted but didn’t want to throw away. Instead we packaged the item in a gift bag and, after brunch, we played a game similar to dirty Santa.

On the menu this time were some very tasty bites including:

To help wash it all down, cousin served a very refreshing and delicious Sherbert Punch. I’ve never heard of or tried this before. It contained the flavors of lime, raspberry and lemonade.

For dessert there was Better Than S-E-X Cake. Ok, it was really, really, really good, but…..

Cousin did a great job with planning our brunch this month. As for the Spring Cleaning game….this is the item I won. So awesome!

This tree is sorta how I’m feeling today… twisting, turning and growing in many directions.  I’m looking forward to the Wonders and Challenges of the week, and a little “down time” this weekend at Atlanta’s Dogwood Festival.

Quick & Easy Strawberry Shortcake

Strawberries are on sale this week so I purchased a quart.  I usually eat them fresh as a snack but today I wanted to make a little treat.

I sliced roughly one pint of the berries,

brown sugar syrup

then combined approximately 1/3 cup of brown sugar and a tablespoon of water in a saucepan and cooked on medium-low for just a few minutes until the brown sugar was melted.

I poured the liquid brown sugar on top of the berries and mixed until coated.

Then I let the strawberries sit for 30 minutes and allowed the strawberries to release some of their juices.

I’m sure you’ve seen these little cake shells in the grocery store.  They were on sale too so I bought a package along with some Cool Whip.

I spooned a few strawberries along with a bit of the sweetened juice onto the cake shell.

Then topped it with a dollop of Cool Whip.  Steeler Fan, Mr. B and Miss A were all satisfied with this little treat.

Fifteen Bean Soup

Winter is officially behind us but I couldn’t resist sneaking in one more “go to” soup to share before my focus changes to cooler meals.

I only use HamBeens for this because of the variety of beans in the package. The recipe is on the back but I alter it a bit to suit my own taste.

You can follow the package directions for cleaning and soaking the beans prior to cooking. After soaking the beans, drain the water and add 2 quarts of fresh water.

I saute pieces of turkey sausage until slighty brown and then add it to the pot of beans. You can use the type of meat the recipe on the package recommends or leave it out all together for a meatless soup.

Next, add 2 – 3 cloves of minced garlic and 1-1/2 cups chopped onions.

Next, stir in a 15 oz. can of stewed tomatoes,

the juice of a lemon, a teaspoon of chli powder, coarse black pepper and seasoned salt to taste. Afterwards, allow the soup to simmer for half an hour.

15 Bean Soup

This soup keeps me nice and comfy and goes great with sweet cornbread.
