Lately, I’ve been trying to do a better job of eating well and exercising. I know – – some of you have been looking around my blog and are giving me the side eye now with a side of yeah right, but, it’s true. I’m find it easier and more satisfying to eat simple, healthier foods than heavier ones. Especially before bed.
What’s making this meal-time adjustment effortless are salad options. I’m all in for anything that you can prepare simply or take over the top without feeling guilty. Last week, organicgirl sent me a box containing a couple salad blends and some of their salad love organic vinaigrettes to try. The greens ended up being dinner for me, Steeler Fan and Miss A. I honestly expected them to be ordinary but was surprised to find the variety of greens crisp, colorful and really good.
The salad blends are the type we can build on with extras like tomatoes, cucumbers, avocado, cheeses, deli meats, fruit and pretty much whatever suits our palates. With 15 combinations of salad greens to choose from, the option to create something tasty and unique each time is motivating. I love flexibility when it comes to salads so imagine how excited this makes me.
Of the two salad blends we tried, Steeler Fan and I fell head over heals for the Pepper Greens while Miss A embraced the Sweet Pea blend. What we unanimously adored to pieces was the White Cheddar vinaigrette. Maybe it’s because we’re all enormous fans of CHEESE in general.
The Kale Parmesan and Fresh Tomato Italian were both quite good as well. I decided to try a simple Sweet Pea salad with the Fresh Tomato Italian as a side to a small bowl of Gumbo and loved it.
The vinaigrette that caught me off guard though was the Lemon Agave. Inside is exactly what the bottle says, “fresh lemons”. It’s tart, a little chunky and lightly sweetened. For me, this one will have to make friends with some fruit before landing on my greens. I have some ideas and will play around with them for a bit, but I can already see this one showing up frequently in my fridge during the Spring.
