How do you feel about Ginger? I hope you say you think it’s fabulous because it is. It’s particularly awesome when you make Ginger Syrup with it. That’s exactly what I did on Sunday and you can do the same. Check out these instructions to see how easy it is.
Start by peeling your ginger. You can use a sharp knife or the edge of a spoon to do this. There’s a quick video at the end of this post which will show you how.
Next, slice the ginger.
Measure two cups of sugar and two cups of water into a saucepan and place over medium heat. Stir the sugar until dissolved. Add ginger and give it another quick stir.
Reduce heat and simmer for an hour, stirring occasionally.
After your hour is up, remove the ginger from the syrup taking care to strain all the juice from the slices. Allow the syrup to cool, then pour into a glass jar or whatever vessel you prefer. You may want to use a sieve when you do this if you don’t want little pieces of ginger love in your syrup.
You can use the syrup lots of ways. I love to use it as a sweetener in Chai Tea or in Lemonade. I’ve even tried it over ice cream. Super good!
Now for the CANDY – Remember those sticky ginger slices? We’re going to make them irresistible!
Sprinkle a cookie sheet with up to ¼ cup of sugar. Toss the ginger pieces in the sugar then spread them out to dry overnight until hardened.
You’ll be astonished by the kick these little pieces of candy give! After you eat one, it will be difficult not to go back for another.
