Many of you have seen Apron’s Simple Meals recipe cards in Publix and probably have a small collection of them at home. I know I do. Many of the stores offer in-store demonstrations and samples for shoppers. I tried the Creole Shrimp Sauté recently and liked it enough to prepare it for dinner at home.
Following the recipe instructions was fairly simple. Here’s a look at what I did.
Start with four slices of thick cut bacon,
Sauté them in a large pan and cook until the bacon is almost done. I cut the bacon into bite-sized pieces after cooking it. While the bacon is cooking, prepare a 9-oz. package of fresh angel hair pasta according to package directions.
Next sprinkle 12 oz peeled and deveined shrimp with 2 tbsp blackened seasoning and ½ tsp crushed red pepper,
then add it to the bacon and cook for 1 minute.
Stir in 1 cup of diced-tomatoes (I used tomatoes from the vine), ¾ cup white wine and 2 tsp minced garlic.
Cook 2-3 minutes until the shrimp turns pink.
Stir in scampi sauce and lemon juice.
Finally, top with 1 tbsp fresh chopped Italian parsley,
and serve over the pasta.
