I’ve heard about beignets for years and have always wanted to try them but have never had the opportunity. Some time ago, The Travel Channel featured Louisiana’s Cafe Du Monde and their famous beignets. Someday, when I get the opportunity to travel to Louisiana, this restaurant will be on my “must visit” list. Until that trip happens, I can still enjoy their puffy treats at home with the Café Du Monde beignet mix.
The Cafe Du Monde mix makes preparation fairly simple. Just add the required amount of water and stir, roll the dough on a floured surface, cut the dough into squares, then deep fry. After frying a couple pieces of dough that remained flat, I learned that oil temperature is really important if you want the dough to rise. It HAS to be hot enough.
Steeler Fan, Mr. B and Miss A all agreed that the beignets were really good. What makes them really cool to eat is that they’re covered in piles of powdered sugar. Café au Lait is served with beignets at the restaurant in Louisiana so the next time I make them, I may do the same.

They are good. You just have to be careful not to “inhale” while taking a bite. Powdered sugar + Lungs = coughfest. 🙂
