My Favorite Mexican Torte

I’m so clumsy.  Got a wall for me to walk in to?  I’m so there.  I try my best to protect me from myself by asking everyone to keep inanimate objects out of my path.  Like stray shoes.

Steeler Fan likes to kick his shoes off at the end of the day.  Yep.  Right in the middle of the floor.  The shoes can’t move themselves, so I do it by tripping over them.  Then Steeler Fan acts all concerned after the fact and promptly moves his shoes out of harms my way.

Then, Mr. B gets in on the see mom almost hurt herself action.  He acts all absent minded and innocent when he leaves his skateboard at the bottom of the step in the garage.  It’s a good thing I learned to check before stepping down to go to the car.  Too bad I’ll ram the door into my leg instead.  Ugh!

Even Miss A has on rare occasions lost her way by leaving her school bags or purse on the main staircase.  I do a perfectly good job of falling up the stairs on my own without any help from her stuff.

Leaving things on the floor is a pet peeve of mine but it probably shouldn’t drive me crazy.  I guess I should be thankful because tripping over a shoe might just save me from walking into a door. : )

Something I’m not clumsy with is this Mexican Torte.  It’s one of my family’s favorites.  Enjoy the step by step photos…the recipe is at the bottom.

MEXICAN TORTE

Ingredients:
1 pound ground turkey
1 pkg taco seasoning mix
1/3 cup water
1 (4 ounce) can chopped green chiles
6 (10 inch) flour tortillas
2 cups shredded mexican cheese blend, divided
1 (16 ounce) can refried beans

Directions:
1.  In a lightly oiled large skillet or frying pan, brown ground turkey over medium heat. Cook, stirring occasionally, until done.
2.  Sprinkle the packet of taco seasoning over the ground turkey and pour in 1/3 cup water. Simmer for 10 minutes. Let cool slightly.
3.  Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 10 inch pie plate.
4.  Place 2 tortillas in pie plate. Spread half of the seasoned ground turkey mixture over the tortillas. Sprinkle with half of the cheese.
5.  Place 1 tortilla on top of cheese. Spread with half the can of refried beans.
6.  Place 1 tortilla on top of beans. Spread with green chiles.
7.  Place 2 tortillas on top of chiles. Spread with remaining ground turkey mixture. Sprinkle with remaining cheese.
8.  Cover and bake in preheated oven for 30 minutes. Uncover and bake 10 to 15 minutes more, or until cheese is melted and center is hot. Cool 10 minutes before cutting.

Serve with sour cream and picante sauce, if desired.

    Personally, I like to think that the walls just want to be close to me and they jump right into my way (which is why I walk into them).

    That torte looks FABULOUS! I would love to cook food like that, but my family should be given the “Picky Eaters” award (including my husband).

    My family will love this! I sometimes make a similar casserole with tortillas, but I don’t have as much of a variety on the layers. This looks so yummy!
