During this time of year, finding ways to warm up after stepping in from the cold is not that big of a challenge when you have hearty soups like this to look forward to.
I only use HamBeens for this soup because of the variety of beans in the package. The recipe is on the back but I alter it a bit to suit my own taste.
You can follow the package directions for cleaning and soaking the beans prior to cooking. After soaking the beans, drain the water and add 2 quarts of fresh water.
I saute pieces of turkey sausage until slighty brown and then add it to the pot of beans. You can use the type of meat the recipe on the package recommends or leave it out all together for a meatless soup.
Next, add 2 – 3 cloves of minced garlic and 1-1/2 cups chopped onions.
Next, stir in a 15 oz. can of stewed tomatoes,
the juice of a lemon, a teaspoon of chli powder, coarse black pepper and seasoned salt to taste. Afterwards, allow the soup to simmer for half an hour.
This soup keeps me nice and comfy and goes great with sweet cornbread.
